Banana and Berry Healthy Pancake Recipe

Oh yeh! These pancakes are so delicious and are the perfect post-workout breakfast to keep me going for the rest of the day.

Banana and Berry Healthy Pancake Recipe:

½ an old banana (mashed)
1/3 cup oats
1 tsp baking powder
1 egg
1 egg white
1 tbs coconut flour
1 tsp vanilla essence
Sliced strawberries
Blueberries
Chobani no fat Greek yoghurt
Sugar free maple syrup (optional)

Combine banana, oats, baking powder, egg, egg white, coconut flour and vanilla essence with an electric mixer. Add some sliced strawberries to the batter and gently fold through. Cook over low heat until brown on either side. Should make about 3 small pancakes.

Once cooked I like to layer the pancakes with the yoghurt and warmed blueberries and strawberries and if I feel like an extra sweet kick, the sugar free maple syrup is perfect 😉

Shredded coconut is nice in the pancakes too! Feel free to try your own variations and let me know how you go!
