This is one of my favourite recipes because it is so simple yet so delicious and good for you. All it contains is just brown rice, vegetables, ham and tamari sauce. It is perfect for busy people who don’t have time to prepare lunch everyday and need something that will provide them with fuel for them to last through the afternoon.
Tamari is a traditional Japanese soy sauce that contains reduced salt (30% less) and is wheat free – a much healthier version than your typical commercial soy sauce!
Ingredients:
1 cup diced capsicum
1 cup diced carrot
1 cup diced zucchini
1 cup diced omelet (whisk 1 egg and 2 egg whites and make into an omelet)
1 cup diced low fat ham
1/2 cup spring onions
1/2 cup brown rice
1 tbs tamari sauce
1 tsp of coconut oil
Method:
1) Cook rice in rice cooker according to its requirements. Line an oven tray (make sure it fits in your fridge) with baking paper and spread rice over paper so it is a thin layer. Place in fridge to cool and dry out.
2) Heat a deep fry pan/wok and add coconut oil.
3) Place carrot in the pan and toff for 1 minute. Add zucchini and toss for another minute. Add capsicum and ham and toss for a further 1 minute. Work the omelet and shallots through the medley and then lastly, add the rice.
4) Pour tamari into the mixture and stir through.
It is so tasty and satisfying! I like to add some chopped up Kanga Bangas to it too just for some extra flavour and protein. Feel free to add whatever vegetables you like. Sometimes I add chopped green beans, celery and corn which are also great additions.
